Blueberry Scones


Ingredients
1/2 cup sugar
3 tablespoons vegan margarine
1/3 cup plain applesauce
1/2 teaspoon vanilla
1 cup all purpose flour
1.5 teaspoons baking powder
1/3 cup vegan sour cream
1/2 cup blueberries (fresh or frozen)


Directions
  • Combine sugar, margarine, applesauce, and vanilla in a bowl. Then add flour, baking powder, and sour cream. Mix well. Add blueberries and mix.
  • Place large spoonfuls of batter on a cookie sheet. Bake at 325°F for 10-15 minutes.

Total time: 20-30 minutes
