7 layer dip

Ingredients
8 ounce can vegetarian refried beans
2 avocados
1/2 teaspoon lime juice
8 ounces vegan sour cream
1.25 ounce package taco seasoning or equivalent amount of chipotle seasoning
1 tomato, diced
1/2 bunch green onions, cut
1 can olives, diced
Vegan shredded cheese (optional)
Tortilla chips for dipping

Directions

  • Spread refried beans on the bottom of a 9x9 dish
  • Cut avocados in half and remove the pit. Scoop the avocado out of each half into a small bowl. Add lime juice and mash the avocado. Spread the avocado mixture onto the refried beans.
  • Combine sour cream and seasoning. Spread on top of the avocado.
  • Add tomato, green onions, and olives to the dish. Top with shredded cheese if desired.
