1 teaspoon vanilla extract
1/4 cup applesauce
1 cup soy milk
1 cup unbleached flour
2 teaspoons baking powder
3 tablespoons sugar
Syrup or fresh fruit
Directions
- Mix the wet ingredients (vanilla, applesauce, and milk) in a bowl. Mix the dry ingredients (flour, baking powder, and sugar) in a separate bowl.
- Combine the wet and dry ingredients. Stir until thoroughly mixed.
- Drop a small amount of vegan butter into a warm pan. Add some pancake mix. Cook until the top starts to bubble and the bottom is cooked. Flip and cook the other side.
- Top with syrup, or for a healthier option use some fresh fruit
