Mexican pizza



Ingredients
4 tablespoons canola oil, separated
4 tortillas
8 ounce can vegetarian refried beans
1/2 package green onions, chopped
1 large tomato, chopped
1 can medium black olives
Soy mozzarella cheese

Directions

  • Heat 1 tablespoon of oil in a pan on medium heat. Once the oil is hot, add a tortilla. Cook until each side is slightly browned. Repeat with all 4 tortillas. 
  • Spread 1/4 of the refried beans on a tortilla, covering the entire tortilla. Place another tortilla on top of that tortilla and spread with another 1/4 of beans. Add half of the green onions, tomato, and black olives. Sprinkle with cheese.
  • Repeat the steps above to make a second pizza.
  • Bake both pizzas at 350 degree F for 10 minutes, or until warmed through.
