Avocado pasta



Ingredients
4 to 6 ounces of thin spaghetti
1 avocado, pitted and peeled
Juice of 1 lemon
2 cloves of garlic, minced
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/4 cup fresh basil
2 tablespoons olive oil

Directions

  • Cook spaghetti according to package directions. Meanwhile, add avocado, lemon, garlic, salt, pepper, basil, and oil to a food processor or blender. Blend until smooth. Toss the avocado mixture with cooked spaghetti.
Note: only make enough for one meal. Leftovers won't keep because of the avocado.
